Simple sweet potato toast recipes

Avocado toast was everywhere this year, but there's a new toast in town that's stealing the spotlight. It's made with sweet potato and it's quickly gaining popularity. 

Nutritionist Melissa Ramos shares four recipes for the latest health food trend.

Almond Butter with Healthy Chocolate Hazelnut Spread with Coconut Flakes and Sliced Strawberries

Makes 2 toasts

WHAT YOU NEED:
  • 2 sweet potato toast slices (1/4” thick slices)
  • 2 tbsp almond butter
  • 2 tbsp organic chocolate hazelnut spread
  • Toppings: coconut flakes and sliced strawberries
  • Optional: rock salt

WHAT YOU DO:
  1. Toast sweet potato toast twice and then add 1 tbsp of almond butter followed by 1 tbsp chocolate hazelnut spread. Sprinkle coconut flakes and strawberries to finish. If you enjoy a sweet and salty combo, feel free to add rock salt to finish.

Smoked Salmon with Cashew Cream Cheese with Red Onion

Makes 2 toasts

WHAT YOU NEED:
  • 2 sweet potato toast slices (1/4” thick slices)
  • 4-5 strips smoked salmon
  • 2 tbsp cashew cream cheese
  • Slices red onion

Cashew Cream Cheese
  • 1 ½ cups cashews soaked overnight
  • 3 tbsp nutritional yeast
  • Juice from one lemon
  • Sea salt to taste

The cashews are soaked overnight and then everything goes into a blender together until a creamy mixture is formed. 

WHAT YOU DO:
  1. Toast sweet potato toast twice and then add 1 tbsp of the cream cheese on each slice. Top with 1 tbsp cashew cream cheese on each slice and then add smoked salmon and top with red onion slices.

Pulled Chicken with Bacon and Grape Tomatoes
Makes 2 toasts

WHAT YOU NEED:
  • 2 sweet potato toast slices (1/4” thick slices)
  • 3 tbsp pulled chicken (see directions below)
  • Quarter or halved grape tomatoes
  • Mayonnaise
  • Sea salt & Cracked pepper
  • Topping: Fresh basil and crispy bacon

WHAT YOU DO:
  1. Toast sweet potato toast twice and set aside. 
  2. In a bowl add pulled chicken, grape tomatoes, mayonnaise, sea salt and cracked pepper. Mix together and add to sweet potato toasts. Top with fresh basil and crispy bacon. 

Pulled Chicken
WHAT YOU NEED:
  • 4 large boneless, skinless chicken breasts (about 2 pounds)
  • 1 cup chicken stock 
  • ½ tsp sea salt
  • Measuring cup
  • 4-quart or larger slow cooker
  • Cutting board or large plate
  • Forks

WHAT YOU DO:
  1. Add the ingredients to the slow cooker: Place the chicken and stock or water in the bowl of a 4-quart or larger slow cooker.
  2. Cook the chicken: Cover the slow cooker with the lid. Cook until the chicken is tender roughly 2 to 3 hours on high temp.
  3. Shred the chicken: While the chicken is still warm, transfer it to a cutting board or large plate and use 2 forks to shred the meat.

Red Bean Spread with Kale
Makes 2 toasts
WHAT YOU NEED:
  • 2 sweet potato toast slices (1/4” thick slices)
  • 2 tbsp red bean spread
  • 3 tbsp sautéed thinly chopped kale (sauté in olive oil, salt & garlic)
  • Chopped roasted red pepper to top
 
Red Bean Spread
  • 3 tbsp organic olive oil
  • 1 large onion, finely diced
  • 3 garlic cloves minced
  • 1 cup kidney beans
  • 1 tbsp tomato paste
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp ground cinnamon
  • Sea salt and cracked pepper
  • 1 lime zested

WHAT YOU DO:
  1. Heat the olive oil and onion and garlic until soft and golden.
  2. Add the kidney beans and their liquid and stir in the tomato paste and spices and cook for a few minutes.
  3. Add the lime juice to the kidney mixture. Take the pan off the heat and when it has cooled, process the mixture until it’s a lumpy puree. 

TO ASSEMBLE:
  1. Toast sweet potato toast twice and set aside. 
  2. Top with red bean paste, sautéed kale and sliced roasted red pepper. Serve.
